Promoting a new scientific discipline

From September 1 to 5, 2025

This course is aimed at undergraduate and postgraduate students in the fields of food, cooking, gastronomy, and related areas. It will run over five days and include daily double sessions that combine theoretical and practical content on culinary and gastronomic sciences.

Activities will be divided into two blocks: theoretical sessions in the morning and practical/demonstrative kitchen and lab sessions in the afternoon, directly linked to the morning’s content.

The course will be held at the Cooking School of Salsomaggiore (Italy), which offers fully equipped classrooms and kitchens for specialized training.

Tuition fees are covered by the organization, subject to participant selection. This includes rental of teaching spaces, cooking materials and ingredients, and coffee breaks during morning and afternoon sessions. Travel, accommodation, and dinners are to be covered by participants.
