Caviaroli was created at 2011. It was the result of 2 engineers specialized at mechanics, electronics and biotechnology.

Thanks to the extensive knowledge in those scientific fields mentioned above, the engineers created something that many people though as impossible; encapsulate the olive oil but remaining de liquid inside this and moreover, without any type of modification.

Caviaroli was shown to the famous chef Ferran Adrià, the owner of elBulli restaurant. He added Caviaroli at the menu because he saw the potential of this ingredient.

Caviaroli has not stopped growing up. Nowadays, we can found it at more than 20 countries in the world and at the best restaurants of the world.
