Sferic Awards Science and Cooking World Congress Barcelona 2024

The Sferic Awards are unique prizes that recognize the contribution of restaurants to scientific innovation in cuisine. Created in 2019, these awards are a testament to the impact of science and technology in haute cuisine.

Awarding Culinary Innovation

Innovation in 21st-century gastronomy has come hand in hand with science and technology. From precision in measurements and temperatures to the creation of unique dishes with a sustainable focus, haute cuisine has become a laboratory of experimentation and discovery.

The Sferic Awards are granted to culinary creations that meet a series of strict criteria:

  • Scientific Innovation: The creations must incorporate a technique, utensil, device, or product that causes a physical or chemical change.
  • International Impact: The innovation must be globally relevant in restaurant cuisine.
  • Regular Application: The innovative technique must be part of the menu of a restaurant open to the public.
  • Consumable Components: The innovation must be applied to consumable components of the dishes.
  • Healthy and Sustainable: Innovation that promotes health, sustainability, and ethical responsibility is valued.

A Renowned Scientific Jury

The selection of awarded innovations is the responsibility of a scientific jury composed of experts in gastronomy and science. Award winners receive the Sferic Award and a diploma attesting to the jury’s decision.

This year, the 2024 Award has been granted to Restaurante LEO, and the presentation will take place on November 11, 2024, within the framework of the Science and Cooking World Congress in Barcelona.

The award will be presented by the team from Disfrutar, who won the Sferic Awards 22-23 and also achieved first place in this year’s Worlds 50 Best.
